
One of the easiest, tastiest, nutritious, quickest perfect winter salads for weeknights. It’s also perfect for meal prep as the ingredients get better as they marinate. I’ve been making this salad for years, and even though I’m a fan of hot foods in cold weather, I make exception for this. If you don’t like kale, this salad will make you a fan! And it’s ready in 15 min.
This salad has all the added benefits of seeds, nuts and an easy miso dressing (here’s your chance to get your dose of fermented foods). ⠀ ⠀
Ingredients
Dressing⠀
Juice of 1 lemon⠀
Extra virgin olive oil – 3 tablespoons⠀
Miso paste – 1 tablespoon⠀
Salad
Kale – 1 bunch cut into ribbons (any type of kale you like)⠀
Carrots – 3 medium shredded⠀
Red onion – 1/4 thinly sliced⠀
Feta cheese – ¼ cup crumbled⠀ (optional)
Walnuts – 2 tablespoon⠀
Sunflower seeds – 2 tablespoon⠀
Method
Mix the dressing first, and set aside. I usually make it at the base of a big glass mixing bowl.
Add all the salad ingredients to the bowl. Massage it in by hands. Let it marinate for 10-15 minutes. Enjoy!
Weeknight Kale Salad with Miso Dressing
Ingredients
- 1 bunch kale shredded
- 3 carrots shredded
- ¼ red onion thinly sliced
- ¼ cup feta or goat cheese
- 2 tbsp walnuts
- 2 tbsp sunflower seeds
Dressing
- 1 lemon juiced
- 3 tbsp olive oil extra virgin
- 1 tbsp white miso paste
Instructions
- Make the dressing. Thin it with water if need be. Set aside.
- Add all the salad ingredients to a large bowl.
- Pour the dressing. massage it in with hands. Let it marinate for 10-15 minutes.
